Sauteed Strawberry, Sausage and Shrimp Salad

Serves: 4-6


Ingredients
FOR THE SAUTE:
2 tablespoons Grapeseed oil
1 pound Shrimp (peeled & deveined)
1/4 cup Diced yellow onion
1 teaspoon Sea salt
1/2 teaspoon White pepper
6 ounces Cooked Italian sausage (diced small)
1/4 cup White wine
1 pint Strawberries (quartered)
1/4 cup White balsamic vinegar
6 tablespoons Unsalted butter
4 ounces Feta cheese (crumbled)
FOR THE SALAD:
1 cup Lettuce (original recipe suggests shredded romaine lettuce)
2 ounces Basil leaves (thinly sliced)
2 ounces Olive oil
1 teaspoon Sea salt

Step by Step Instructions
  1. Heat the grapeseed oil in a large saute pan, then add the shrimp and onions and let them cook for 2 minutes before seasoning with salt and pepper. Cook for 2 to 3 more minutes
  2. Add the sausage to the pan and let cook for 2 more minutes. Deglaze the pan with the white wine and let it reduce to half before turning the heat to low.
  3. Add the strawberries and balsamic vinegar and let cook for 2 minutes. Stir in the butter until the mixture is smooth, then add the crumbled feta cheese.
  4. Toss the lettuce, basil, olive oil, and sea salt together to combine.
  5. Serve the shrimp saute topped with the salad mixture.
