Balsamic Roasted Beets

Ingredients
3 Beets (peeled & diced)
1 tablespoon Olive oil
1/2 teaspoon Sea salt
1 tablespoon Balsamic vinegar
1 tablespoon Honey

Step by Step Instructions
  1. Preheat oven to 425 and grease a baking sheet or oven-safe baking dish.
  2. Toss the diced beets with olive oil & sea salt, then spread them out on baking sheet in an even layer.
  3. Bake in the oven for 20 to 30 minutes, stirring them around after 10 or 15 minutes. Whisk the balsamic vinegar and honey together in a bowl.
  4. After the beets have baked, drizzle them with the honey mixture and stir until well coated.
  5. Return the beets to the oven and let them cook for 10 more minutes (stirring them after 5 minutes.) Serve the beets directly after cooking or store them for a salad mix-in.
