Garlic Fried Tomatoes

Vegan!

Ingredients
6 to 8 large Tomatoes
1/4 cup Olive oil
10 cloves Garlic (finely chopped)
2 or 3 Chili peppers (finely chopped)
1/2 teaspoon Salt
1 small bunch Fresh mint (finely chopped)
Bread for serving

Step by Step Instructions
  1. Slice each tomato in half horizontally. Put the halves cut-side down in a large frying pan in a single even layer.
  2. Pour the olive oil over the tomatoes and cook over medium heat for 5 minutes.
  3. Flip the tomato halves over, then scatter half of the finely chopped garlic & peppers over them and the other half into the oil in the pan.
  4. Season with salt, then cover the pan, reduce the heat, and let cook for 15 minutes. Periodically uncover the pan and spoon some of the flavored oil over the tomatoes.
  5. Sprinkle the fresh chopped mint over the tomatoes and let them cook for 1 or 2 more minutes before serving with bread.
