Rosemary Roasted Purple Potatoes

Ingredients
6 Purple potatoes (peeled & cubed)
2 tablespoons Olive oil
4 cloves Garlic (crushed)
3 sprigs Rosemary
2 teaspoons Salt
1 teaspoon Pepper

Step by Step Instructions
  1. Preheat oven to 400 degrees and line a baking sheet with foil.
  2. Put the potato cubes, rosemary sprigs, and crushed garlic cloves into a bowl and drizzle them with olive oil. Mix until well combined & coated.
  3. Spread the mixture onto the baking sheet (make sure they are evenly spread out into a single layer). Season evenly with salt & pepper.
  4. Bake for 20 minutes, stirring the cubes after 10. Discard the garlic cloves and rosemary sprigs, then serve the potatoes warm.
