Herb Crusted Honey Bourbon Pear Pork Chops

Ingredients
2 Bone-in pork chops
1 teaspoon Kosher salt
1 teaspoon Granulated sugar
2 tablespoons Olive oil
2 teaspoons Olive oil
1/2 teaspoon Pepper
2 teaspoons Minced fresh rosemary
2 teaspoons Minced fresh thyme
2 tablespoons Unsalted butter
2 Pears (pitted & halved, stems left on)
1/4 cup Orange juice
1/4 cup Honey
1/4 cup Bourbon
Juice from 1 lemon
1 tablespoon Unsalted butter

Step by Step Instructions
  1. Pat the pork chops dry and season them with the salt and sugar, then let them sit for 30 minutes.
  2. Brush 1 teaspoon of olive oil on each side of the pork chops, then season them with pepper, and the fresh minced herbs. Rub the herbs into each side of the chops.
  3. Heat 2 tablespoons of olive oil and of butter in a large skillet (cast iron if possible) (do not allow the pan to smoke).
  4. Put the pork chops into the pan with space between them. Put the pears into the skillet flesh-side down between them. Cook for 5 minutes, then turn the chops over and let the other side cook for 5 as well. (remove the pears to a plate if they begin to overcook).
  5. Remove the pork chops from the pan, then turn the skillet heat to low, and add the orange juice, honey, lemon juice and bourbon to the cooking juices.
  6. Whisk the pan mixture together, then add 1 tablespoon of unsalted butter and whisk it as well. Add the pork chops and pears back to the skillet and heat through, then serve.
